  • 1 whole chicken about 4-5 lbs – Fresh or thawed, with giblets removed. Choose a high-quality chicken for the best flavor and texture.
  • 2 tbsp olive oil – Helps create crispy skin while locking in moisture. For an alternative with a richer flavor try using melted butter.

Homemade Rotisserie Seasoning Blend:

  • 1 tbsp paprika smoked or sweet – Adds rich color and smoky depth.
  • 1 tsp garlic powder – For savory aromatic flavor.
  • 1 tsp onion powder – Balances the seasoning with a mild sweetness.
  • 1 tsp dried thyme – Earthy and aromatic perfect for poultry.
  • 1 tsp dried rosemary – Adds a fresh woodsy note.
  • 1 tsp ground black pepper – For a hint of heat and complexity.
  • 1 tsp salt – Essential for enhancing all the flavors adjust to taste

Optional Flavor Boosters:

  • 1 lemon halved – Stuffed inside the chicken for a hint of citrus.
  • Fresh rosemary and thyme sprigs – Infuse the meat with fresh herbal notes.

Instructions
 

Step 1: Preheat Your Oven

  • Set your oven to 375°F (190°C). This temperature allows the chicken to cook evenly, resulting in moist meat with a perfectly crispy exterior.
  • If you’re using a rotisserie oven, adjust the settings according to the manufacturer’s instructions.

Step 2: Prepare the Chicken

  • Take out any giblets from the chicken’s cavity. Pat both the inside and outside of the chicken dry with paper towels—this step is essential for getting that crispy skin.
  • Coat the entire chicken with olive oil, making sure to apply it evenly. For a richer flavor, you can also use melted butter.

Step 3: Season Generously

  • In a small bowl, combine paprika, garlic powder, onion powder, thyme, rosemary, black pepper, and salt.
  • Rub the spice mixture all over the chicken, including inside the cavity and under the skin for maximum flavor.
  • For an aromatic boost, stuff the cavity with lemon halves and fresh sprigs of rosemary and thyme.

Step 4: Secure the Chicken (Optional, but Recommended)

  • Cross the chicken’s legs and tie them together with kitchen twine to help it maintain its shape and cook more evenly.
  • Tuck the wings close to the body to prevent them from burning during roasting.

Step 5: Roast to Perfection

  • Place the chicken breast-side up on a roasting rack set inside a roasting pan. Using a rack allows heat to circulate evenly, ensuring crispy skin all around. If you don’t have a rack, use thick slices of onion or carrot as a base.
  • Roast the chicken for approximately 1 hour 15 minutes. Use a meat thermometer to check the internal temperature—the thickest part of the thigh should reach 165°F (74°C) for perfectly cooked, juicy meat.
